How to Buy

Price by hanging weight

All prices are by-the-pound are based on the "hanging weight." Weight just after the animal is butchered and is "hanging" on the rail. Subtracts hide, head, blood mass, internal organs, and typically leg below front knee and hind hock joint.

Butcher cutting process

Animals are delivered live to a local butcher shop. When they are ready to cut, we contact you. You will call the butcher who guides you through the cutting process. The butcher custom cuts and packages meat to your specifications.

Making the Reservation

You can pay your deposit  and all final payments via credit card, Paypal, Check or cash

Frequently asked questions

Cow Reservations for 2025

Whole Cow Deposit

$200.00
Pay with PayPal or a debit/credit card

  • Live weight is usually between 1,000-1,200 lbs.  Approx. 56-58% of live weight makes up hanging weight.
  • Percentages vary based on how you want it cut, but generally:
    • 25% Steaks
    • 25% Roasts
    • 30% Ground Beef
    • 20% Bones and Organs
  • Butcher shop will age/hang carcass up to 7 to 14 days prior to cutting
  • Ask if you want the organs and bones or any other "cut" they don't mention (i.e. brisket)
  • Beef can be purchased as a 1/4, 1/2, 3/4, or a whole
  • You pay
    • Jersey Settlement Farm based on hanging weight, $4/lb
    • Butcher for slaughter (varies from $50 - $75) and processing fees ($.50/lb to $.80/lb)

Lamb Reservations for 2025

Whole Lamb Deposit

  • Typical live weight is about 110 lbs 
  • 50%-56% of live weight makes up the hanging weight
  • 75% of hanging weight makes up the take home weight
  • Lamb can be purchased as a 1/2 or whole
  • You pay
    • Jersey Settlement Farm based on hanging weight, $7.50/lb
    • Butcher for slaughter and processing, (fee varies, either $.50/lb and a $50 - $75 slaughter fee, or $70 straight fee.  It will depend on who the butcher is at that time)


Pork Reservations for 2025

Whole Pig Deposit

  • Typical live weight is about 250 lbs
    • We can raise smaller roasting pigs if needed
  • 70% of the live weight makes up the hanging weight
  • 65% of the hanging weight makes up the take home weight
  • Pig can be purchased as a 1/2 or whole
  • You pay
    • Jersey Settlement Farm based on hanging weight, $4.50/lb
    • Butcher for slaughter and processing, approximately $.50-$1.00/lb due to value added products
      • Smoked Ham
      • Bacon
      • Sausages
